Around the time Poppy was born I stumbled across this recipe for Basic Quiche and have been using it ever since. This is such an easy recipe that you can "trick out" based upon your likes that we are continually trying new things with it. We like to make a few at a time.
And, it makes a terrific item to bring to someone that has had a baby, is ill, etc. We are taking one to our friends who are in the hospital with their daughter this week. I hope it helps the get well vibes flow quickly.

Basic Quiche
Ingredients
1 9 inch whole wheat pie crust (Frozen)
1 tablespoon olive oil
2 medium onions, chopped
Kosher salt and black pepper
1 cup flat leaf parsley, chopped
4 large eggs
3/4 cup half-and-half
1/8 teaspoon nutmeg
8 ounces Gruyere cheese, grated (2 cups)
*we like to add 4 sliced of chopped Prosciutto*
other add ins can include: sauteed mushrooms, red peppers, thawed frozen spinach, diced ham, etc.
Directions:
- Heat oven to 375 degrees. Place the frozen pie crust on a baking sheet.
- Heat the oil in a large skillet over medium-low heat. Add the onions and 1/2 teaspoon each of salt and pepper and cook, stirring occasionally, until soft, 5 to 7 minutes. Stir in the parsley.
- In a large bowl, whisk together the eggs, half-and-half, nutmeg, and 1/4 teaspoon salt. Stir in the onion mixture and the Gruyere.
- Pour the egg mixture into the crust. Bake until a knife inserted into the center comes out clean, 35-40 minutes. Let sit for 5 minutes before serving.
