Our neighbor recently gave us a huge bag of juicy blackberries and of course, Marc wanted to make healthy smoothies with them, while I instantly thought they would be great in a shortbread cookie. So to keep the peace, we split the bag and Marc got his smoothies and I wiped up some delish cookies which he proceeded to mow down too!
Shortbread thumbprint cookies with fresh blackberries
Ingredients
1 1/2 cups butter, softened
1 cup sugar
3 egg yolks
3 cups flour, sifted
1 1/2 teaspoons vanilla
fresh blackberries
Directions
- Cream butter and sugar together
- Add egg yolks, flour and vanilla, mix well
- If dough is too soft to handle, work in a little more flour
- Roll dough into little balls
- Place on ungreased cookie sheet
- Make a thumb print in the center of each
- Place 2-3 blackberries (depending on size) into each thumbprint well
- Bake at 400 degrees for 8-10 minutes until light brown around the edges
